INGREDIENTS
For the salad:
- 2 15-ounce cans
black beans rinsed and drained - 1 cucumber finely chopped
- 3 roma tomatoes seeded and finely chopped
- 2-ounce can sliced olives drained
- 5 scallions finely sliced
- 1 orange bell pepper finely chopped
For the dressing:
- 3
chipotle peppers in adobo finely chopped - 1/4 cup
honey - 1/4 cup
rice vinegar - 1/4 cup
olive oil - salt and pepper to taste
INSTRUCTIONS
- Add all of the salad ingredients to a large mixing bowl. Set aside.
- Mix all of the dressing ingredients in a bowl. Pour the dressing over the salad ingredients. Mix well so that the salad ingredients are well coated in the delicious spicy sweet dressing. Drain any excess liquid.
- Chill in the refrigerator until ready to serve.

This is a keeper! After chopping the chilies for the dressing, I thought it was a lot of chilies, so I added half to the dressing. After tasting it, I added the rest and it is amazing! Didn’t even need salt or pepper, perfectly sweet and spicy. Love it with all these veggies! Definitely will make again!
