These garlic latkes (i.e., potato pancakes) are the perfect brunch food. They are essentially hash browns on steroids. They are filled with crunchy scallions that provide a delightful splattering of green, and have thinly sliced garlic and chopped fresh rosemary leaves. The latkes are crisp and golden brown on the outside and soft on the inside. They are quick to make and even quicker to gobble up!
When I made these the first time, I was surprised at how little time I spent making this dish. You shred the potatoes in a food processor, and mix everything (potatoes, scallions, garlic, egg, etc.) in a mixing bowl. Then you grab spoonfuls of the mixture and drop them in the pan, forming flat patties with a spatula. Quick and easy skillet meal, perfect for a simple breakfast or brunch. I actually just had my first latkes this year, while I stayed at a bed & breakfast in Cape Cod. The hostess was German and cooked up the most amazing German latkes as well as waffles and omelettes. Everything she made was so delicious! This recipe was inspired by her latkes, and I’ve added my personal touches like using fresh rosemary and scallions.
Rosemary garlic latkes with crunchy scallions
These garlic latkes (i.e., potato pancakes) are the perfect brunch food.
Add these ingredients to the same mixing bowl: scallions, garlic, rosemary, egg, flour, Parmesan cheese, salt, and pepper. Mix the ingredients well. Roughly divide the mixture in half, and then divide each half into thirds so you end up with 6 piles. This will give you an idea of how much mixture to form for each of the 6 latkes.
Heat olive oil in a large shallow pan over medium heat. Scoop up a pile of potato mixture and roughly form in the shape of a patty and place it on the pan. Each latke will hold its shape once heated. Repeat for all six latkes.
Cook each side of the latke until crisp and browned to your liking, at least 5 minutes per side. You can press down on each latke with a spatula to give it a nice sear. Serve immediately.
