  • 1 pound crab meat
  • 8 ounces cream cheese softened to room temperature
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup finely grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon paprika

For topping:

  • 1/4 cup shredded mozzarella cheese
  • 1 scallion thinly sliced
  • 1/4 teaspoon paprika


  1. Preheat the oven to 350 F.
  2. Combine all ingredients except toppings in a large bowl. Beat with an electric hand mixer until well-mixed, occasionally pausing to scrape down the mixer’s beaters and bowl. The resulting mixture should be smooth and thick, without any clumps of cream cheese or crab.

  3. Transfer the mixture to a baking dish, spreading it out evenly.
  4. Bake at 350 F until heated through and puffy, about 30 minutes.
  5. Remove from the oven and evenly top with cheese, paprika, and sliced scallions.
  6. Broil until the top is golden brown, a few minutes. Watch carefully to avoid burning the cheese.
