Try out my favorite Mexican pasta salad loaded with delicious ingredients like avocado, cheddar cheese, corn, beans, and extra crispy bacon — all tossed together in a slightly spicy mayo dressing.
Ingredients

farfalle pasta
or bowtie pasta

black beans
drained and rinsed

strips bacon
▢

avocado
chopped
▢

scallions
thinly sliced

cooked
corn
▢

shredded cheddar cheese
For the spicy dressing:

mayonnaise
▢

teaspoon
paprika
▢

teaspoon
cayenne

teaspoon
salt

pepper
Instructions
Cook pasta according to package instructions. Drain and rinse with cold water until cool.
Cook bacon strips on a pan over medium heat until crispy. Transfer to a paper towel to drain. Crumble into small pieces.
Combine and mix dressing ingredients in a bowl.
Combine all ingredients in a large salad bowl and toss with dressing. Serve cold.
