Made 2 batches of these, one plain as written and one with jam in the middle for my husband. They are nice and soft and buttery. I'm doing keto and I missed butter cookies so much. These are great, so quick and easy to make! As stated in the instructions it's so much quicker and easier to just knead it with your hands. For me the dough weighed around 210g so I made 10, 21g balls. Baked for 10 mins at 350°F, and they all came out with a nice brown bottom and golden top. These are quite small cookies so you'd want to make a few batches if you're bringing them to an event.

I doubled the recipe, ground up some dehydrated strawberries in the processor making 1/3 cup, put it in the bottom of a 2 cup measure and filled the rest of the way with almond flour. Instead of the fork press method, I made it into a roll, and sliced them about 1/4 inch thick. they were amazing!!!

I added 3/4 cup of peanut butter and these turned out to be the best tasting peanut butter cookies I have ever made! Thank you for the recipe.

Made these today & they are delicious!!! Doubled the batches because one batch is too little :p Replaced some of the almond flour with my unflavoured protein protein powder and homemade black sesame powder. I might have accidentally added too much butter because the cookies were kind of swimming in a some of the melted butter in the oven. The eggs & gelatin powder definitely help to hold the cookies together In any event, it turned out great! Will make it again. Thank you :)

I love these cookies! I make them all the time. I use unsalted butter because I have to limit my salt AND sugar. I sometimes put a Lilly’s chocolate chip in the middle. So good! I just made some more, but I want to try them with lemon extract…. So I am making another batch right now haha. Love that this recipe is so easy, quick, and not many ingredients! Thank you!

Hi, I just wanted to say I made these this morning, using half vanilla and half almond extract. They turned out very nice. Wonderfully satisfying for the sweet tooth. Thanks!

Love LOVE this recipe!! The only thing I change once in a while is add a dab of ChocZero hazelnut spread on top of each cookie AFTER baking. So good the entire family loves them ( I found spread on Amazon)

I made this and subbed some finely chopped pecans for part of the almond flour. I only had granular erythritol, so I tried powdering it. Everything else was the same. I loved this cookie! I'm looking at the possible variations now.

Fabulous! I used Hazenut extract...also divided the recipe into 4 and made variations on flavors. One with coconut, one with toasted almonds and one with added cocoa powder. All were great but liked the coconut flakes and toasted almonds the most followed by the original recipe! Also, just made round balls. Felt it kept it more moist on the inside. So delicious!!!!

Would it work to leave out sweetener all together or would it affect the texture? I do not use any sugar substitutes. Thanks!

Leaving out the sweetener would affect the texture. If you don't want to use sugar substitutes, replace with 3 tablespoons of powdered sugar.

These cookies (biscuits in Australia) look great, how long would you cook them in an Airfryer at 180C ?

These tasted good, but I was not able to cook them to a point where they would hold their shape. They were more like picking up pancakes.

I couldn’t believe how easy these were to make and how good they are! I was worried the cookies were gonna be too gritty or dry but NOPE. This is the perfect little keto treat and I can’t wait to experiment with different toppings.
