These were the best butter cookies and so easy. Will double the recipe next time.
Hope you have other recipes using just coconut flour. Thanks

I made these tonight and they were fantastic. I'm the only one in my house on a Keto diet, but my wife and both kids tried a cookie and all agreed they were great! I substituted chicory root sweetener because thats all we had available. Next time I might try a bit less of the chicory root. And I'm wondering how some chopped macadamia nuts would be in this...

Yes, This was my first time baking cookies using almond flour.
It was delicious. I love nuts, so I added some chopped pecans. It’s definitely a keeper!
Thank you for sharing your recipe!

Have you ever tried making the dough and freezing it? If so, does it will turn out the way it usually does when you do bake it? I am looking for a good cookie dough recipe that I can batch make and freeze to take out when I want to bake some cookies.

I haven't tried freezing it, but a previous commenter (Robyn) wrote that it freezes well.

Do you know if ghee would work in replace of butter? Thanks.

I haven’t tried these yet, but they look so good! Will this recipe work with a cookie press? I’d love to use it for Christmas spritz cookies.

I added the Keto Nut Granola by Low Carb that you can buy at Costco :)

Changing the sweetener to coconut sugar..would that still be 1/4 cup?

I believe coconut sugar is a 1:1 replacement for regular white sugar, same as Swerve. Powder the coconut sugar using a blender like a Nutribullet (I'm assuming it's granulated to start with) and measure out 3 tablespoons (or 1 ounce by weight) of the powdered coconut sugar.

I just made these and the look and smell delicious. Waiting for them to cool completely ....

They're cool enough to eat and they're great! I don't have Swerve, so I used Splenda. I used a little less than 1/4 cup and probably should've used even less.
I'm not a "sweets person", will always prefer a second helping of dinner to dessert, but I saw this simple recipe and just had to try it. They'll be great with a cup of chamomile at night! Thank you ... excited to try your other recipes.

I've been making these since last spring when one of my pandemic induced hobbies because trying out keto baking. Previously I've added chocolate chips, but yesterday I added cardamom and cinnamon and it may be my favorite version of them - so good with a cup of tea.

I love this recipe as base for so many variations. I doubled the ingredients and added 1 beaten egg, 1/2 cup toasted unsweetened coconut, 1/2 cup toasted slivered almonds, 1/2 cup Lily’s dark chocolate chips, and substituted 1/2 tsp almond extract and 1/2 tsp vanilla extract. Oh. My GOD!! The cookie I have been waiting for since beginning my keto journey!

I made 2 batches of these. One with lemon flavoring and one with almond. They are both very good. This recipe is a keeper.

I literally double the recipe but my family devours them in a span of 10 minutes. They are the only keto recipe I can actually make, turned out wonderful! I’m making them almost every week! Guaranteed deliciousness.
